Old fashioned pancakes with a healthy twist. Made with old fashioned oats and organic ground flax seed you will definitely get your serving of fiber.
Ingredients
4 Cups Old Fashioned Oats (Blended)
⅓ Cup All Purpose Flour
3 ½ Teaspoons baking powder
¼ Teaspoon Kosher Salt
1 Tablespoon Cane Sugar
1 Egg
1 ½ Cup Coconut Milk (any plant based milk)
2 Tablespoon butter melted
2 teaspoons vanilla extract
Mixed Berry Compote
1 Cup fresh blueberries
1 Cup Blackberries (Smashed)
2 tablespoons salted butter
4 tablespoons cane sugar
½ lemon (juiced)
Directions
Measure 4 cups of Old Fashioned Oats into a blender. Blend the oats until they turn in to Flour.
Measure out 2 cups of Oat flour into a large mixing bowl. Add flour, baking powder, kosher salt, ground flax seed and sugar to the mixing bowl.
In another mixing bowl combine milk, eggs and vanilla and whisk together. Then pour the mixture into the oat flour mixture.
After the ingredients are mixed well. Melt 2 tablespoons of butter in the microwave and pour it into the batter.
After all ingredients are combined and mixed well together, heat a skillet on medium heat and scoop out batter into skillet. Cook on each side for 1 - 3 minutes before turning over.
Repeat steps until all batter is cooked. Batter can be saved in a air tight container for up to one week.
Mixed Berry Compote
Smash blackberries with a fork and add to a sauté pan with blueberries.
Add butter, sugar and lemon juice to the sauté pan.
Mix all ingredients together and cook until berries are softened. (Add sugar to your desired sweetness)
Once cooked pour mixture onto pancakes and serve.
Recipe Note
Any plant based milk can be substituted. Coconut milk will add a slight sweeter taste to the pancakes. Oatmilk will make pancakes a bit more fluffy.
